Our Story

We’re Hunter’s Holy Dough—a small but mighty bagel shop proudly located in the heart of Downtown Cobourg, and Northumberland County’s only dedicated bagel bakery.
 
We’re Matthew and Sarah, a couple who moved to Cobourg with our family from Toronto in 2023. As lifelong food lovers and serious bagel enthusiasts, some of our favourite memories are weekend trips to the city’s most iconic bagel shops with our kids. When we arrived in Cobourg, it didn’t take long to notice something was missing: traditional, handcrafted bagels.
 
We got our start at the Cobourg Farmers Market in June 2024, where we began selling our bagels to the local community. The response was incredible—and it quickly became clear that our bagels filled a real gap in the area. Shortly after, we took the leap, invested in commercial equipment, and leased our first storefront—turning Holy Dough into a full-time gig for Matt.
 
At Holy Dough, we boil and bake our bagels the traditional way, combining techniques from both Montreal and New York to create something uniquely our own. We’ve taken inspiration from two cities with rich bagel cultures to bring you the best of both worlds—bold, chewy, and full of flavour.
 
Our mission is simple: to be a place where good food, great service, and feeling like home come together. Whether you’re popping in for a breakfast sandwich, grabbing a dozen to take home, or visiting us at the farmers market, we’re here to make sure every visit feels warm, welcoming, and delicious.
